Apple Hand Pies
- 1 Package Pie Crusts- Two Crusts, that you can roll out
- 2 Large Apples, peeled and cored
- 2 Tbsp Butter
- 1/4 Cup White Sugar
- 2 Tbsp Packed Brown Sugar
- 1/4 Tsp Salt
- 3 Tbsp Water
- 1 1/2 Tsp Cinnamon
- 1 Egg
- 2 Tsp Milk
- 1 Tsp White Sugar, for topping
- Line baking sheet with parchment paper, set out pie crusts to reach room temperature.
- Cut apples into chunks filling about 3 cups.
- Melt butter in a skillet over medium heat until it turns light golden brown.
- Stir in apples, sugars, and salt.
- Stir often and cook for about 5-6 minutes.
- Stir in water and cinnamon.
- Continue cooking until apples are soft and sticky.
- Spread filling out onto a plate to cool.
- Preheat oven to 400F.
- Whisk together egg and milk for an egg wash.
- Unroll pie crusts onto a lightly floured surface.
- Cut 6-inch circles out of each crust.
- Spoon about 1/4 cup of filling into each crust, slightly off-center.
- Brush the outer edges of crusts with egg wash.
- Fold dough over mixture and press edges with a fork.
- Put on baking sheet and slit the tops of the pies a bit.
- Brush tops of pies with remaining egg wash and sprinkle with sugar.
- Bake about 15 minutes, until golden brown and bubbling.
- Cool for 20 minutes.
